- 1 cup packed brown sugar
- 1 cup molasses
- 3 large eggs
- 6 cups all purpose flour (lightly spooned and levelled)*
- 1 tbsp baking powder
- 1 tsp baking soda
- 1 tsp kosher salt
- 1 tbsp ground ginger
- 1 tbsp ground cinnamon
- ½ tsp ground cloves
Instructions

In the bowl of a standing mixer fitted with the paddle attachment, beat the softened butter and packed brown sugar on medium-high speed until the mixture is light and fluffy. This typically takes about two minutes. Remember to pause occasionally and scrape down the sides and bottom of the mixer bowl to ensure everything is thoroughly combined. Next, beat in the molasses until fully incorporated, followed by the eggs, one at a time, mixing well after each addition until smooth.

In a separate, medium-sized bowl, whisk together the dry ingredients: all-purpose flour, baking powder, baking soda, kosher salt, ground ginger, ground cinnamon, and ground cloves. Ensure these are well combined to distribute the leavening agents and spices evenly throughout the dough.

Gradually add the dry flour mixture to the wet ingredients in the standing mixer. Begin on low speed to prevent the flour from flying out, and continue beating until just combined and a cohesive dough forms. Avoid overmixing. Divide the dough into two equal portions.
