Ingredients

  • 2 tbsp olive oil plus more as needed
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 2 cups unsalted chicken broth
  • 1 tsp kosher salt
  • 1 lb peeled butternut squash cut in 1″ cubes
  • 1 lb dry pasta
  • ¾ cup heavy cream
  • ½ cup grated Parmigiano-Reggiano
  • freshly ground black pepper for serving

Instructions

  1. Bring a large pot of generously salted water to a rolling boil. This will be for your pasta.
  2. In a heavy-bottomed pot or Dutch oven, heat the olive oil over medium heat. Add the finely chopped onion and sauté until it becomes translucent and soft, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant, being careful not to burn it.
  3. Pour in the chicken broth, add the kosher salt, and the cubed butternut squash. Bring the mixture to a boil, using a wooden spoon to scrape up any browned bits from the bottom of the pot, which will add extra flavor. Reduce the heat to low, cover the pot, and simmer until the squash is very tender, approximately 15 minutes.
