Essential Butter Chicken Ingredients

Understanding the components of this classic dish is key to mastering its flavor. Here’s a detailed breakdown of the ingredients that create our renowned Indian Butter Chicken sauce and perfectly tender chicken.

For the Velvety Sauce

  • Vegetable Oil or Ghee: While vegetable oil works perfectly, a generous spoonful of ghee (clarified butter) will infuse your sauce with an even richer, deeper, and more authentic Indian flavor. Ghee adds a nutty aroma and enhances the overall luxuriousness.
  • Onion: Essential for building the foundational sweetness and body of the sauce. We use a substantial amount, but don’t be deterred; these onions cook down beautifully, caramelizing gently to release their natural sugars, becoming an imperceptible, sweet backbone to the curry. This slow caramelization replaces the need for added sugar often found in less authentic recipes, providing a complex, savory-sweet depth.
  • Aromatic Spices (Paprika, Cayenne, Cumin, Cinnamon): This carefully balanced blend provides the signature warm, inviting Indian flavor profile. Paprika adds a mild sweetness and vibrant color, cayenne delivers a gentle heat (which can be adjusted to your preference), cumin offers an earthy depth, and cinnamon imparts a subtle, sweet fragrance that ties all the flavors together harmoniously.
  • Tomatoes: The acidic backbone of our rich sauce. While fresh, ripe tomatoes can be used, we typically opt for canned diced tomatoes for convenience and consistent flavor year-round. If using fresh, you might need a splash of water during cooking to achieve the desired consistency. Tomatoes provide a tangy counterpoint to the creaminess.
  • Heavy Cream: This is where the “butter” in Butter Chicken truly comes into its own. Also known as whipping cream, double cream, thickened cream, or 35% m.f. cream depending on your region, it provides the quintessential silky texture and rich mouthfeel that defines this dish. It mellows the spices and adds an irresistible decadence.
  • Butter: Added at the final stage, butter is crucial for finishing the sauce. It melts in to create a glossy sheen, an incredibly smooth texture, and an additional layer of rich, creamy flavor that makes the sauce truly luxurious and restaurant-quality.
  • Fresh Cilantro (Optional Garnish): While optional, a sprinkle of freshly chopped cilantro brightens the dish with a burst of freshness and adds a beautiful vibrant green contrast, enhancing both appearance and aroma.

For the Tender Chicken Marinade

  • Chicken Breast: Boneless, skinless chicken breast cut into 1-2 inch cubes absorbs the marinade beautifully, cooking quickly and staying tender within the rich sauce. Chicken thighs can also be used for an even juicier result.
  • Fresh Lemon Juice: Acts as a tenderizer, breaking down the chicken fibers and allowing the flavors to penetrate deeply. It also adds a bright, zesty note that complements the spices.
  • Minced Garlic and Ginger: A foundational duo in Indian cooking, these potent aromatics infuse the chicken with an incredible depth of flavor right from the start.
  • Garam Masala: This essential Indian spice blend is a cornerstone of our marinade. Consisting of up to 10 different aromatic spices—such as cumin, ground ginger, black pepper, cinnamon, turmeric, and cardamom—garam masala delivers a complex, warm, and highly fragrant profile that is crucial for authentic taste.

How to Make This Easy Butter Chicken Recipe: Step-By-Step Perfection

Follow these simple steps to create a truly unforgettable Butter Chicken that’s packed with flavor and surprisingly easy to prepare.

  1. Marinate the Chicken: In a bowl or zip-top bag, combine your cubed chicken breast with lemon juice, minced garlic, garam masala, and salt. Ensure the chicken is thoroughly coated. Allow it to marinate for at least 30 minutes at room temperature, or for an even deeper flavor, refrigerate it overnight. This crucial step tenderizes the chicken and infuses it with aromatic spices.
  2. Sauté the Onions to Golden Perfection: Heat vegetable oil or ghee in a large saucepan or Dutch oven over medium heat. Add the chopped onions and cook slowly, stirring occasionally, until they turn a beautiful golden brown and become wonderfully soft and translucent. This can take about 20 minutes. Be patient here, as proper onion caramelization is key to the sauce’s natural sweetness and depth. Then, add the minced garlic and ginger, cooking for just 1 minute until fragrant.
  3. Infuse with Spices & Tomatoes: Stir in the remaining garam masala, paprika, cumin, cinnamon, cayenne, and salt. Cook for another minute, allowing the spices to bloom and release their aromatic oils. Next, add the diced tomatoes and cook for 2 minutes, stirring to combine.
  4. Create the Creamy Sauce Base: Pour in the heavy cream. For an exceptionally smooth sauce, carefully use an immersion blender directly in the pot, or transfer the mixture to a regular blender and process until velvety. Blend until all onion pieces are imperceptible. The sauce base will appear quite thick at this stage, which is exactly what you want before adding the chicken.
  5. Gently Cook the Chicken: Add the marinated chicken cubes (along with any remaining marinade) to the prepared sauce. Stir to coat the chicken evenly. Cover the pot and simmer over medium-low heat for approximately 12 minutes, or until the chicken is cooked through and no longer pink inside. It’s vital to maintain a gentle simmer and avoid overcooking, especially with chicken breast, to ensure it remains incredibly tender and juicy.
  6. Finish and Serve: Remove the pot from the heat and stir in the butter until it melts and incorporates into the sauce, giving it a final luxurious sheen and richness. Taste and adjust the salt if necessary. Garnish generously with fresh cilantro if desired. Serve this magnificent Butter Chicken piping hot with warm, fluffy garlic naan, cheese naan, or fragrant basmati rice, and savor every exquisite bite!

💡 Chef’s Insight: Simplified Chicken Cooking

Many traditional Butter Chicken recipes often suggest an extra step: cooking the chicken separately first (sometimes even grilling or pan-frying) before simmering it in the sauce. While this can add a smoky flavor, we’ve found it’s not strictly necessary for an incredibly delicious and tender outcome, especially when you’re looking for an easy weeknight meal.

The secret to tender chicken without pre-cooking lies in the marinade. Chicken breasts cook relatively quickly, so they wouldn’t absorb much flavor from the sauce alone. The marinade ensures they are deeply flavored and tenderized even before they hit the pan. When added directly to the simmering sauce, they finish cooking gently, retaining moisture and blending seamlessly with the curry’s rich flavors. This method streamlines the process without compromising on taste or texture.

Make Ahead and Storage: Tips for Convenience

This Butter Chicken recipe is fantastic for meal prepping or enjoying later. Here are some invaluable tips to help you prepare it in advance and store it, ensuring deliciousness whenever a craving strikes.

  • Marinate Overnight for Enhanced Flavor: For the most profound depth of flavor, marinate your chicken the night before you plan to cook. This allows the lemon juice, garlic, ginger, and garam masala to fully penetrate the chicken, resulting in incredibly tender and flavorful pieces. This also saves valuable prep time on a busy cooking day.
  • Prepare the Sauce in Advance: The sauce is robust and holds up wonderfully. You can prepare the entire sauce base (steps 2-4) a day or even two days ahead of time. Store it in an airtight container in the refrigerator. When ready to cook, simply reheat the sauce gently on the stove and proceed with adding the marinated chicken. This makes for an incredibly quick weeknight dinner.
  • Refrigerator Storage: Any leftover Butter Chicken should be stored promptly in a sealed, airtight container in the refrigerator. It will maintain its delicious flavor and quality for up to 3 days. The flavors often meld and deepen further overnight!
  • Freezing Tips for Long-Term Enjoyment: Butter Chicken freezes exceptionally well, making it perfect for batch cooking. Transfer cooled leftovers into freezer-safe airtight containers or heavy-duty freezer bags. Lay bags flat to save space. It can be frozen for up to 2 months. When ready to enjoy, thaw overnight in the refrigerator.
  • Reheating for Optimal Taste: To reheat, gently warm the Butter Chicken over low heat on the stove. If the sauce has thickened considerably during storage, add a small splash of water or a touch of cream to achieve your desired consistency. Stir frequently to prevent sticking or burning, and ensure the chicken is heated through evenly. Avoid high heat, which can cause the sauce to separate or the chicken to become tough.

Marination Mastery: Tips for Perfect Chicken

Even a brief marinade in our flavorful blend makes a significant difference, but a little extra time can elevate your Butter Chicken from great to extraordinary.

  • The Planner’s Choice: Overnight Marination: If you’re planning ahead, marinating the chicken overnight in the refrigerator offers the maximum benefit. This extended soak allows the acidic lemon juice to tenderize the meat thoroughly and the spices to infuse every fiber, resulting in unparalleled flavor and juiciness.
  • The Spontaneous Cook’s Solution: The Half-Hour Mingle: Don’t have time for an overnight marinade? No problem! Even giving the chicken a quick half-hour to mingle with the marinade while you prepare the sauce base will make a noticeable difference in its flavor and tenderness compared to unmarinated chicken.
  • The Perfectionist’s Upgrade: Charred Chicken: For those who love an extra layer of flavor, consider adding a step to lightly char the marinated chicken cubes. You can do this on a hot grill, a cast-iron grill pan, or even under a broiler for a few minutes until they develop some smoky, caramelized edges. Then, simply toss these flavorful charred pieces into the simmering sauce. This adds a wonderful depth and texture contrast.

Pressure Cooker Butter Chicken: For Speedy Weeknights

For those times when you need Butter Chicken on the table faster, your Instant Pot or other pressure cooker can be a game-changer. Here are a few simple adaptations to our recipe:

  • Prepare the Sauce (No Cream Yet): Follow the initial sauce preparation steps (sautéing onions, adding aromatics and spices, then tomatoes) as directed in the main recipe. However, do not add the heavy cream at this stage.
  • Pressure Cook: Add the marinated chicken and the sauce base to your pressure cooker. Seal the lid and pressure cook on high for 3 minutes. After cooking, perform a quick pressure release according to your device’s instructions.
  • Remove Chicken & Blend Sauce: Carefully remove the cooked chicken from the pot and set it aside. This prevents the chicken from breaking down too much during blending. Stir in the heavy cream into the sauce. For a perfectly smooth texture, use an immersion blender directly in the pot to puree the sauce until silky.
  • Combine & Serve: Return the chicken pieces to the smooth, creamy sauce. Stir gently to combine and allow the chicken to warm through for a minute or two. Serve immediately with your favorite accompaniments.
Slow cooker preparing Butter Chicken
Prepare a tender Butter Chicken in your slow cooker for a hands-off approach.

Slow Cooker Butter Chicken: Effortless and Flavorful

If you prefer a hands-off approach and a meal that cooks itself throughout the day, this recipe adapts wonderfully to a slow cooker or CrockPot. The most significant difference is cooking the chicken breasts whole to ensure they remain incredibly moist and tender over a longer cooking period, allowing them ample time to absorb the rich flavors of the sauce.

  • Marinate Whole Chicken Breasts: Instead of cubing the chicken, marinate whole boneless, skinless chicken breasts with the lemon juice, garlic, ginger, garam masala, and salt. This helps keep them from drying out during the longer slow-cooking process.
  • Prepare Sauce and Assemble: Follow the sauce preparation steps (sautéing onions, adding aromatics and spices, then tomatoes) as directed in the main recipe. Transfer the prepared sauce base to your slow cooker. Place the whole marinated chicken breasts directly on top of the sauce. Again, do not add the cream at this stage.
  • Slow Cook: Cover your slow cooker and cook on high for 3 hours, or on low for 6-8 hours, until the chicken is fork-tender.
  • Finish the Sauce & Combine: Once cooked, carefully remove the whole chicken breasts and set them aside. Stir the heavy cream into the sauce. For a wonderfully creamy texture, use an immersion blender to puree the sauce directly in the slow cooker insert until smooth. Shred or cut the cooked chicken into chunks.
  • Return Chicken & Serve: Return the shredded or chunked chicken to the smooth, creamy sauce. Stir gently to combine and let it warm through for about 10-15 minutes on the “keep warm” setting. Serve hot and enjoy the incredibly tender chicken and rich sauce!

FAQs About Butter Chicken

Here are quick answers to some of the most commonly asked questions about this beloved Indian dish.

Is butter chicken spicy or sweet?

Butter chicken masterfully balances both spicy and sweet notes, making it a harmoniously flavored dish. However, it is definitively on the mild side of the spice spectrum when compared to many other Indian curries, making it palatable for a wide range of tastes.

What does butter chicken taste like?

Butter chicken offers a truly distinctive taste. It’s characterized by its incredibly rich creaminess, derived from butter and heavy cream, which beautifully mellows a mild warmth from various Indian spices. Sweet undertones, often from caramelized onions and tomatoes, add depth and complexity, creating a luxurious and comforting flavor profile.

What is the difference between chicken tikka and butter chicken?

The primary difference lies in their preparation and sauce. Chicken tikka refers specifically to spice-marinated pieces of chicken, traditionally cooked in a tandoor (clay oven) to achieve a smoky char. Butter chicken, on the other hand, consists of these tender chicken pieces (or similarly marinated chicken) immersed in a rich, creamy, tomato-based curry sauce. Interestingly, you can even use leftover tandoori chicken tikka as the base for a butter chicken sauce for an added layer of flavor!

What is butter chicken sauce made of?

The luscious sauce for butter chicken is typically a blend of key ingredients including ripe tomatoes, generous amounts of heavy cream and butter, and a complex array of aromatic Indian spices such as garam masala, paprika, cumin, and cinnamon, along with foundational aromatics like garlic and ginger. This combination creates its signature rich, creamy, and flavorful profile.

Why is it called butter chicken?

The name “Butter Chicken” is a direct reflection of its prominent ingredients. It’s named for the significant amount of butter and cream used in its creamy, velvety sauce, which imparts the dish with its characteristic rich flavor, smooth texture, and appealing glossy finish.

Which is healthier: butter chicken or chicken tikka?

Generally, chicken tikka tends to be considered the healthier option of the two. This is because chicken tikka typically consists of lean, grilled chicken pieces without the rich, calorie-dense creamy sauce that is a hallmark of butter chicken. Butter chicken, due to its high butter and cream content, contains more calories and fat.

How is butter chicken different from chicken tikka masala?

While both are popular creamy chicken curries, butter chicken (Murgh Makhani) is distinctly creamier and typically less tomato-intense and milder in spice. Chicken tikka masala often features a more pronounced tomato flavor, a spicier kick, and a slightly coarser texture, with a stronger emphasis on the “masala” (spice blend).

What is butter chicken also called?

Butter Chicken is widely known by its Hindi name, Murgh Makhani. “Murgh” means chicken, and “Makhani” translates to buttery, perfectly describing this iconic dish.

Best Butter Chicken Recipe Ever (Better Than a Restaurant!)

By:
Jennifer Pallian BSc, RD
Truly the best Butter Chicken (Murgh Makhani) recipe. It’s a creamy and perfectly spiced Indian curry recipe with tender chicken and lots of sauce to mop up with warm naan.
Prep Time:
15 minutes
Cook Time:
35 minutes
Total Time:
50 minutes
Servings:
6

Ingredients

For chicken and marinade:

  • 2 ¼ lbs boneless, skinless chicken breast cut in 1″ – 2″ cubes
  • 3 tbsp lemon juice
  • 1 tbsp minced garlic
  • 1 tbsp garam masala
  • 1 ½ tsp kosher salt

For sauce:

  • ¼ cup vegetable oil or ghee
  • 2 ½ cups chopped onion about 2 medium-large
  • 2 tbsp minced garlic
  • 2 tbsp minced ginger
  • 3 tbsp garam masala
  • 1 tbsp paprika
  • 1 tsp cumin
  • ¼ tsp cinnamon
  • ¼ tsp cayenne
  • 2 tsp kosher salt or to taste
  • 1 ¼ cups diced tomatoes no-salt-added, if canned
  • ¾ cup heavy cream (also called whipping cream, double cream, thickened cream or 35% m.f. cream depending where you live)
  • 2 tbsp butter
  • 1 tbsp cilantro chopped, to garnish (optional)

Instructions

For marinade:

  • Combine all ingredients in a zip-top bag or shallow baking dish, massaging the marinade into the chicken. Let stand at room temperature while you prepare the sauce, or marinate in the fridge overnight.

For sauce:

  • Heat oil (or ghee) over medium heat in a large saucepan or dutch oven. Add onions and slowly cook until golden, about 20 minutes, reducing heat if they are getting crispy or browning quickly.
  • Add garlic and ginger and cook until fragrant, about 1 minute. Stir in garam masala, paprika, cumin, cinnamon, cayenne and salt; cook 1 minute more to let the spices toast.Add tomatoes; cook 2 minutes, then add cream.Optional: carefully puree using an immersion blender or regular blender. The sauce base will probably look quite thick at this point (see notes below).

To assemble the curry

  • Add the chicken to the sauce, along with the marinade. Cover, and simmer over medium-low heat until chicken is cooked through, about 12 minutes (remove a couple of pieces to make sure they are no longer pink inside). A gentle simmer is required to gently cook the breasts so they don’t become tough, and you don’t want to overcook them.
  • Stir in butter, taste and add more salt if needed. Serve sprinkled with cilantro, if desired.

Notes

The chicken will release quite a bit of water, so hold off on adding additional liquid to the sauce unless the chicken is burning to the bottom of the pot.
Too much extra liquid will dilute the rich, flavorful sauce.

Variations and Substitutions

Feel free to tweak the recipe with these ideas to make it your own.

  • Chicken thighs: For an even more flavorful and moist curry, substitute chicken breast with boneless, skinless chicken thighs.
  • Lemon Juice Substitute: If you’re out of fresh lemons, you can use lime juice or plain yogurt for marinating the chicken.
  • Dairy-Free Option: To make this recipe dairy-free, simply use coconut oil in place of butter and substitute the heavy cream with full-fat coconut milk.

Tools You Need

Make sure you have these essential kitchen tools on hand to prepare this recipe smoothly and efficiently.

  • Large saucepan or Dutch oven: Ideal for sautéing ingredients and simmering the sauce and chicken together.
  • Immersion blender: Perfect for blending the sauce directly in the pan to your desired smooth consistency without transferring.
  • Measuring spoons and cups: Crucial for accurate ingredient proportions to ensure perfect flavor balance.
  • Chopping board and knife: For efficient preparation of your onions, garlic, ginger, and chicken.
  • Zip-top bag or shallow dish: Essential for effectively marinating the chicken, ensuring deep flavor penetration.
