These easy, flaky buttermilk scones are studded with juicy, fresh mango and white chocolate that caramelizes to make the most delicious treat.
Ingredients
- 2 ½ cups all-purpose flour
- 2 tbsp sugar
- 1 ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ½ cup cold butter, cubed
- 1 cup buttermilk
- 1 egg
- ¾ cup diced fresh mango (or thawed frozen)
- ½ cup white chocolate chips or chunks
Instructions
- Line a large, rimless baking sheet with parchment paper and set aside. Preheat oven to 400 degrees Fahrenheit (200 degrees Celsius).
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt. Use the largest holes on a box grater to grate in the cold butter. In a separate bowl, whisk the buttermilk with the egg until combined. Pour this wet mixture over the flour mixture. Stir gently with a fork until a soft, ragged dough forms. Be careful not to overmix.
- Dump the dough out onto a lightly-floured surface. Scatter the diced mango and white chocolate chips evenly over the top of the dough.
