Skillet Three-Cheese Lasagna: Ingredients

  • Two cans (one 28-ounce, one 15-ounce) whole peeled plum tomatoes
  • 3 garlic cloves, finely chopped
  • 3 tablespoons extra-virgin olive oil
  • Coarse salt and freshly ground black pepper, to taste
  • 1 large egg yolk
  • 1 1/2 cups part-skim ricotta cheese (12 ounces), at room temperature
  • 1 box (12 ounces) no-boil lasagna noodles
  • 2 cups shredded fresh mozzarella cheese (approximately 1/2 pound)
  • 1/4 cup grated Pecorino Romano or Parmigiano-Reggiano cheese (1 ounce)

Skillet Three-Cheese Lasagna: Preparation

  1. Preheat your oven to 400ºF (200ºC). In a food processor, pulse the whole peeled plum tomatoes (along with their liquid) until they are coarsely pureed. Transfer the pureed tomatoes, chopped garlic, and olive oil to a large, oven-safe sauté pan or skillet. Bring this mixture to a boil over medium-high heat, then season generously with coarse salt and freshly ground pepper. Reduce the heat to medium and simmer, stirring occasionally, until the sauce has thickened to a rich consistency, which should take approximately 12 minutes. At this point, you should have roughly 5 cups of flavorful marinara sauce.

  2. While the marinara simmers, prepare the cheese mixture. In a medium-sized bowl, combine the large egg yolk, part-skim ricotta cheese, and 1/2 teaspoon each of salt and pepper. Mix thoroughly until all ingredients are well incorporated and smooth.

  3. Carefully pour the majority of the marinara sauce into a separate heatproof bowl, leaving approximately 3/4 cup of sauce in the sauté pan. Spread this remaining sauce evenly across the bottom of the pan to create the first layer. Arrange a single layer of no-boil lasagna noodles over the sauce, breaking them as needed to fit the pan perfectly. Spoon half of the prepared ricotta mixture over the noodles, spreading it evenly. Follow with a second layer of noodles, then generously ladle 1 1/2 cups of the reserved marinara sauce over them. Add a third layer of noodles, followed by the remaining ricotta mixture. Complete the layering with a final layer of noodles, then pour the rest of the marinara sauce over the top. Finish by sprinkling both the shredded fresh mozzarella and the grated Pecorino Romano (or Parmigiano-Reggiano) cheese evenly over the entire surface.

  4. Bake the skillet lasagna in the preheated oven for 30 to 35 minutes, or until the cheese is beautifully golden brown and the sauce is bubbling invitingly around the edges. Once baked, remove the lasagna from the oven and let it stand for at least 10 minutes before serving. This crucial resting period allows the layers to set and makes for easier, cleaner slicing.
