Potato-Crusted Turkey Sausage Quiche with Caramelized Onions and Gruyere

Ingredients

  • 5 Grimm’s Turkey Farmer Sausage rounds (8 oz/225 g), sliced into ½-inch pieces
  • 6 tbsp vegetable oil, divided
  • 2 medium onions, halved then thinly sliced crosswise (yields approximately 2 ½ cups)
  • 1 ½ cups grated yellow potato, packed (from about 2 medium potatoes)
  • ¾ tsp kosher salt, divided
  • 8 large eggs
  • 1 ¼ cups whole milk
  • ¾ cup heavy cream
  • ⅛ tsp freshly ground black pepper
  • ⅛ tsp ground nutmeg
  • 1 ¼ cups grated Gruyere cheese (approximately 2 ½ oz/70g)
  • 1 green onion, dark green part only, minced, for garnish

Instructions

  1. Preheat your oven to 450ºF (230ºC) with a baking stone or a heavy-duty baking sheet placed on the lower rack. Prepare the turkey sausage by slicing rounds into strips, then crosswise into ½-inch pieces.
  2. Heat 1 tablespoon of vegetable oil in a 10-inch oven-proof cast iron skillet over medium-high heat. Add the sliced sausage and cook, stirring occasionally, until nicely browned on both sides, typically 2-3 minutes. Once browned, transfer the sausage to a plate and set aside.
  3. Add another tablespoon of oil to the same skillet and reduce the heat to medium-low. Add the thinly sliced onions and cook gently, stirring occasionally, until they are very soft and achieve a deep golden brown color. This caramelization process will take approximately 25 minutes. Once caramelized, transfer the onions to the plate with the sausage.
  4. While the onions are caramelizing, prepare your potato crust. Place the grated potatoes in the center of a clean kitchen towel. Gather the towel around the potatoes and forcefully wring out as much excess moisture as possible. Open the towel, sprinkle the potatoes with ¼ tsp of kosher salt, and toss to season evenly.
  5. In a medium bowl, whisk together the eggs, milk, heavy cream, ¼ tsp kosher salt, black pepper, and ground nutmeg until the mixture is well combined and homogenous.
  6. Carefully wipe the skillet clean with paper towels to remove any residual onion bits or oil. Add 2 tablespoons of oil to the skillet and increase the heat to medium-high. Once the oil is shimmering hot, add the grated potatoes and press them firmly and evenly into the skillet to form the crust. Cook until the underside is golden brown and crispy, about 4 minutes (gently lift with a spatula to check for color).
  7. To flip the hashbrown crust: place a plate upside-down on top of the hashbrown in the skillet. Using oven mitts for safety, firmly hold the plate and skillet together and quickly flip the entire thing over. Add the remaining 2 tablespoons of oil to the pan, then gently slide the hashbrown crust back into the skillet to brown the other side for another 4 minutes or so. (Don’t worry if the crust tears slightly; simply piece it back together and press it into the pan; it will bake together seamlessly).
  8. Remove the skillet from the heat. Evenly sprinkle the cooked hashbrown crust with the grated Gruyere cheese, followed by the browned turkey sausage and the caramelized onions. Pour the whisked egg mixture carefully over the top, and then sprinkle with the minced green onion for garnish.
  9. Reduce the oven temperature to 350ºF (175ºC). Carefully transfer the skillet to the preheated baking stone or baking sheet on the lower rack of the oven. Bake for approximately 20-25 minutes, or until the quiche filling is set and lightly golden brown on top.
  10. Allow the quiche to cool for a few minutes before slicing and serving. It can be served warm, at room temperature, or even enjoyed as delicious leftovers straight from the fridge. Enjoy your delightful homemade holiday quiche!
