Ingredients

For the Blender Dutch Baby

  • 3 tablespoons unsalted butter
  • 3 large eggs (brought to room temperature)
  • ¾ cup unbleached all-purpose flour
  • ¾ cup whole milk
  • 1 tablespoon granulated sugar
  • ½ teaspoon kosher salt
  • ½ teaspoon pure vanilla extract

For Topping (Optional, but highly recommended for a full flavor experience)

  • 1 cup frozen tart cherries
  • Heaping 1 tablespoon granulated sugar
  • Maple syrup, warmed
  • Yogurt (plain, vanilla, or Greek for extra creaminess)
  • Optional additional toppings: Powdered sugar, fresh berries, whipped cream, lemon wedges

Instructions

  1. Prepare Eggs to Room Temperature: Place the large eggs in a bowl of warm tap water for approximately 5 minutes. This quick step helps bring them to room temperature, which is an important factor in achieving the maximum lift and characteristic puffiness of your Dutch Baby.
  2. Preheat Oven & Skillet: Preheat your oven to a robust 425°F (220°C). While the oven heats, add the 3 tablespoons of unsalted butter to a 10-inch cast-iron skillet (or another sturdy, oven-safe pan of similar size). Place the pan in the preheating oven until the butter is completely melted and bubbly, indicating it’s piping hot. Be vigilant to ensure the butter does not brown or burn.
  3. Blend Batter until Just Combined: While the oven and skillet are heating, prepare your batter. In a high-powered blender, add the room-temperature eggs. Blend them on medium-high speed for about 5 seconds until they appear light and bubbly. Next, add the remaining Dutch Baby ingredients to the blender: the unbleached all-purpose flour, whole milk, granulated sugar, kosher salt, and pure vanilla extract. Pulse the blender on low speed just until all ingredients are combined and the batter is smooth, typically about 5 more seconds. It is crucial not to overmix the batter to ensure a tender Dutch Baby.
  4. Bake the Dutch Baby: Once the oven has reached temperature and the butter in your skillet is melted and actively bubbling, carefully remove the intensely hot pan from the oven. Immediately and carefully pour the freshly blended batter into the prepared hot pan. Promptly return the pan to the oven and bake for 13 to 15 minutes. This topping can be prepared well in advance and gently reheated just before serving.
  7. Serve & Enjoy Immediately: Carefully remove the dramatically puffed Dutch Baby from the oven. Using a sharp knife or spatula, cut it into individual wedges directly within the skillet.
