Embracing Summer’s Gentle Pace: A Philosophy of Saying “Yes” to Joy
Summer is truly upon us, and with it comes a natural inclination to slow down, breathe deeper, and savor the moments. It feels like just yesterday it was spring, and now July has arrived in a beautiful rush. In the whirlwind of daily life, it’s easy to get caught up in an endless cycle of commitments, deadlines, and digital distractions. But as the sun shines brighter and days stretch longer, there’s a powerful whisper urging us to pump the brakes and embrace more fun, more presence, and more genuine connection.
For me, this summer season has become a conscious exercise in the art of saying “no.” Saying no to an overwhelming schedule, declining additional projects, skipping media events, and even consciously stepping away from the nightly news. It’s a deliberate choice to filter out the noise and create space for what truly matters. I’m learning firsthand the profound power of that seemingly simple word, a power my three-year-old seems to inherently understand and wield with delightful abandon.

This isn’t to say I’m ungrateful for the opportunities or invitations that come my way; quite the opposite. I’m consistently humbled and even a little surprised by every request. However, with my littlest one, my precious nine-month-old, still in what feels like his newborn phase in my mind, time feels incredibly fleeting. He’ll only be a baby for such a short while longer – a realization that hits with a gentle, yet firm, gulp.
This precious window has inspired a renewed commitment to intentional living. We’ve embraced a membership at our local botanical garden, transforming ordinary afternoons into cherished memories. Picture this: toes wiggling in cool grass, laughter echoing during a game of catch, and the sticky sweetness of fresh cherries on warm fingers. It’s about consciously choosing to move a little slower, to be fully present in each moment, and to soak up the simple, fleeting joys of childhood and nature.

The Philosophy of Our “Healthy-ish” Cookies: Wholesome Ingredients Meet Irresistible Flavor
Now, about these cookies: they come with “bunny ears” around the word healthy. Why? Because while they are brimming with an array of fantastic ingredients, at their core, a cookie’s primary purpose is to be utterly delicious. We believe in smart choices and nourishing your body, but never at the expense of pure, unadulterated enjoyment. These aren’t diet cookies; they are thoughtfully crafted treats designed to make you feel good inside and out.
Our recipe thoughtfully combines the best of both worlds. We load them with the goodness of fibrous oats and a diverse mix of seeds – sunflower, flax, pumpkin, and chia – each contributing its unique nutritional profile. Oat flour provides a tender texture, while crunchy cocoa nibs add a sophisticated depth of flavor and antioxidant benefits. But let’s be real, a truly satisfying cookie also needs a bit of classic indulgence. That’s why we generously include real butter and decadent chocolate. Because, as the saying goes, we are not animals, and we deserve a truly delightful treat!
The bottom line for any cookie is simple: it must be undeniably delicious. If it’s not, why bother? These “healthy-ish” cookies unequivocally pass the deliciousness test, offering a perfect harmony of textures and flavors. They are chewy, crunchy, sweet, and deeply satisfying, with their inherent health benefits being a wonderful bonus rather than their sole reason for existence.
They are, in fact, best enjoyed in the most idyllic settings: perhaps outdoors, with bare feet touching cool grass, while you quietly (or loudly!) say “no” to the pressures of the day and “yes” to a moment of pure bliss. It’s about finding joy in the simple act of a perfect bite.

Ingredient Spotlight: The Power of Seeds and Oats
What makes these cookies so special, beyond their incredible taste? It’s the carefully selected, wholesome ingredients. Let’s delve into why each component plays a vital role:
- Oats (Large Flake & Oat Flour): Oats are a nutritional powerhouse, renowned for their high fiber content, particularly beta-glucan, which is excellent for heart health and can help regulate blood sugar levels. They provide sustained energy, making these cookies a smart choice for a filling snack. Using both large flake oats and oat flour gives these cookies a fantastic chewy texture with a subtle nutty flavor.
- Sunflower Seeds: These tiny powerhouses are rich in vitamin E, an antioxidant, and provide healthy fats, magnesium, and selenium. They add a pleasant crunch and a mild, earthy flavor.
- Flaxseeds: A phenomenal source of Omega-3 fatty acids (ALA), flaxseeds are also packed with fiber and lignans, which have antioxidant properties. They contribute to the moistness and binding of the cookies.
- Pumpkin Seeds (Pepitas): Vibrant green pepitas are a great source of protein, healthy fats, magnesium, and zinc. They offer a distinct nutty flavor and another layer of satisfying crunch.
- Chia Seeds: Don’t let their small size fool you! Chia seeds are incredibly nutrient-dense, providing fiber, Omega-3s, protein, and various minerals. They help absorb moisture, contributing to a tender crumb.
- Currants: These small dried grapes are bursting with natural sweetness and provide antioxidants and dietary fiber. They add a lovely tart-sweet counterpoint to the richer flavors.
- Cocoa Nibs: Raw, unsweetened pieces of cacao beans, cocoa nibs are a superfood. They offer intense chocolate flavor, a delightful crunch, and are loaded with antioxidants and magnesium.
- Chocolate: While adding a touch of decadence, dark chocolate (especially) also provides antioxidants. It ties all the flavors together and ensures these cookies are truly a treat.
Making your own oat flour is simple! I prefer to make mine fresh in a high-speed blender like a Vitamix from steel-cut oats, which ensures maximum freshness and nutritional integrity. However, if you prefer or don’t have oats on hand, whole wheat flour can be an excellent substitute, offering its own set of wholesome benefits.

“Healthy” Cookies With Seeds And Currants
Ingredients
- 1 cup butter
- 1 cup granulated sugar
- ½ cup brown sugar
- 2 eggs
- 1 tsp vanilla
- 1 cup all purpose flour
- ⅔ cup oat flour
- 1 cup large flake oats
- 1 tsp kosher salt
- 1 tsp baking powder
- ½ tsp baking soda
- ½ cup sunflower seeds
- ¼ cup flaxseeds
- ¼ cup raw pumpkin seeds pepitas
- 2 tbsp chia seeds
- ½ cup cocoa nibs
- ½ cup currants
- 5 oz finely chopped chocolate
Instructions
-
Preheat oven to 375ºF (190°C).
-
In a standing mixer fitted with the paddle attachment, beat the butter with both granulated and brown sugars until the mixture is light and fluffy, which should take approximately 2 full minutes. Then, beat in the eggs one at a time, followed by the vanilla extract, ensuring everything is well combined.
-
In a separate medium-sized bowl, whisk together the all-purpose flour, oat flour, kosher salt, baking powder, and baking soda. Gradually add this dry mixture to the butter mixture in the standing mixer, with the mixer speed on low, until just incorporated. Be careful not to overmix. Finally, beat in the remaining ingredients, including the sunflower seeds, flaxseeds, pumpkin seeds, chia seeds, cocoa nibs, currants, and finely chopped chocolate (reserve a few pieces of chocolate and pumpkin seeds if you wish to use them for topping) until everything is just combined.
-
Roll the cookie dough into balls, each about 2 tablespoonfuls in size, between your hands. Place them approximately 3 inches apart on a prepared baking sheet. Gently flatten each ball slightly with the palm of your hand. If desired, press a piece of reserved chopped chocolate and a few pumpkin seeds onto the top of each flattened cookie for an appealing finish.
-
Bake for about 8 minutes, or until the edges are golden brown but the centers still appear slightly soft and underdone. This ensures a wonderfully chewy cookie. Allow the cookies to cool on the baking pans for 2 minutes before carefully transferring them to wire racks to cool completely.
