Ingredients

  • ¾ cup butter, softened
  • 1 cup granulated sugar
  • ¼ cup molasses
  • 1 egg
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp kosher salt (*see note below for other salt types)
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • ¼ tsp ground cloves
  • Coarse sugar for rolling (or additional granulated sugar)

Instructions

  1. Preheat your oven to 375ºF (190ºC). In the bowl of a standing mixer (or with a hand mixer), beat together the softened butter, granulated sugar, and molasses until the mixture is light and fluffy. This usually takes about 2 minutes. Beat in the egg until fully incorporated.
