Why This Honey Mustard Chicken Thigh Recipe Stands Out

What makes these grilled chicken thighs truly exceptional? It all comes down to a few key elements:

  • The Marinade Magic: Our unique marinade doesn’t just add flavor; it actively tenderizes the chicken, ensuring it remains incredibly moist even after grilling. The combination of tangy mustard, bright lemon, and creamy yogurt works wonders, breaking down tough fibers to create a succulent texture.
  • Perfectly Balanced Flavor: The honey mustard glaze strikes an exquisite balance between sweet and tangy, creating a sticky, caramelized coating that is simply addictive.
  • Crispy Skin, Juicy Meat: We’ll guide you through grilling techniques that guarantee perfectly crisp skin without drying out the interior.
  • Bone-In, Skin-On Advantage: Using bone-in, skin-on chicken thighs adds an extra layer of flavor and protection, contributing to the overall juiciness and rich taste.

Mastering Grilled Honey Mustard Chicken Thighs: Step-by-Step

Achieving grilling perfection is simpler than you think. Follow these steps for flawlessly cooked chicken every time:

  1. Craft Your Irresistible Honey Mustard Glaze: In a small bowl, whisk together a portion of the Dijon mustard with the honey. This mixture will be reserved for brushing onto the chicken towards the end of the cooking process, creating that glorious caramelized finish. If marinating for more than a couple of hours, pop this glaze in the fridge.
  2. Prepare the Flavor-Infused Marinade: In a large baking dish, combine the remaining Dijon mustard with full-fat Greek yogurt, fresh lemon juice, minced garlic, cooking oil (like avocado or canola), kosher salt, paprika, and a touch of ground cayenne for a subtle kick. Add the bone-in, skin-on chicken thighs, ensuring each piece is thoroughly coated. Cover the dish and let the chicken marinate for at least 30 minutes at room temperature. For an even deeper flavor, refrigerate it for up to 24 hours. Remember to let it sit at room temperature for 30 minutes before grilling for the best results.
  3. Preheat Your Grill to Perfection: Heat your gas grill to medium, closing the lid and allowing it to preheat for 5-10 minutes. This creates an even cooking surface. Once heated, safely oil the grates using long tongs holding a paper towel dabbed in high smoke-point oil. This prevents sticking and ensures beautiful grill marks.
  4. Initiate Grilling with Direct Heat: Place the marinated chicken thighs skin-side down on the preheated, oiled grates. Grill for approximately 7 minutes over direct medium heat. Resist the urge to move them until they naturally release from the grates without sticking or tearing. This indicates the skin has crisped and developed a fantastic char.
  5. Transition to Indirect Heat for Juiciness: After the initial searing, turn off half of your grill’s burners. Flip the chicken pieces over and move them to the unlit side of the grill. Now, turn the side with *no chicken* on it to high heat. This clever two-zone setup effectively transforms your grill into an oven, allowing the chicken to cook through gently without burning the exterior. Close the grill lid and continue cooking until the internal temperature reaches 165ºF.
  6. Glaze and Caramelize to Golden Perfection: With the chicken almost fully cooked, it’s time for the magic touch. Liberally brush both sides of the chicken pieces with the reserved honey mustard sauce. Continue cooking over indirect heat with the lid closed for another 5-10 minutes. During this stage, the glaze will caramelize into a sticky, golden-brown coating, and the internal temperature of the thighs should reach 175ºF for optimal tenderness.
  7. Rest for Ultimate Juiciness: Once your chicken reaches the desired temperature and boasts a beautiful glaze, transfer it to a clean plate. Allow the chicken to rest, uncovered, for 5-10 minutes before slicing and serving. This crucial step allows the juices to redistribute throughout the meat, resulting in unparalleled tenderness and flavor. The total cooking time will typically range from 25-35 minutes.

The Secret to Fall-Apart Tender Chicken Thighs: Cook Beyond 165°F

Here’s a game-changing tip that will revolutionize your chicken thigh cooking: you’re going to intentionally “overcook” the chicken. Yes, you read that right!

Let me explain this culinary paradox. While most poultry is considered food-safe at 165ºF (74ºC), dark meat like chicken thighs contains a higher concentration of collagen. This tough connective tissue needs a higher temperature—specifically, around 175ºF (79ºC) or even up to 185ºF (85ºC)—to completely break down and melt into gelatin. This process is what transforms firm, somewhat rubbery chicken thighs into that silky, fall-off-the-bone tender texture everyone loves.

Think about slow-cooked dishes like my Crockpot Chicken Tacos; the chicken is cooked at a low temperature for an extended period, allowing the collagen to fully render. When grilling, we achieve a similar effect by pushing the internal temperature slightly higher for dark meat. This ensures that the collagen liquifies, infusing the meat with moisture and creating an incredibly succulent result.

Trust this expert tip: once you experience the difference, you’ll never go back to undercooked chicken thighs. Aim for at least 175ºF for that perfect, melt-in-your-mouth texture.

Grilled Honey Mustard Chicken Thighs

By: Jennifer Pallian BSc, RD

Grilled Chicken Thighs are made ultra juicy with my powerful tenderizing marinade ingredient. Flavourful with irresistible crispy bits.

Prep Time:
20 minutes
Cook Time:
30 minutes
Marinating time:
30 minutes
Total Time:
1 hour 20 minutes
Servings:
6

Ingredients

For Honey Mustard Sauce

  • ½ cup dijon mustard (divided use)
  • ¼ cup honey

For Mustard Marinade

  • ¼ cup full-fat Greek yogurt
  • ¼ cup lemon juice
  • 2 tbsp minced garlic
  • 2 tbsp cooking oil (like avocado or canola oil – don’t use a low smoke-point oil like olive oil)
  • 2 ½ tsp kosher salt
  • 1 tsp paprika
  • ¼ tsp ground cayenne
  • 3 lbs bone-in, skin-on chicken thighs

Instructions

Make the Honey Mustard Sauce

  1. In a small bowl, whisk together 1/4 cup of the mustard and the honey. Set aside. (Refrigerate if marinating longer than a couple of hours.)

Marinate the Chicken

  1. Whisk remaining mustard with yogurt, lemon juice, garlic, oil, salt, paprika, and cayenne in a large baking dish. Add the chicken thighs and turn to coat. Cover the dish with plastic wrap and marinate chicken for 30 minutes at room temperature (or up to 24 hours in the refrigerator – the flavor gets even better if you can do this!). Either way, let the chicken stand at room temperature for 30 minutes just before cooking for best results.

Prepare the Grill

  1. Turn burners on a gas grill to medium heat and preheat the grill for 5-10 minutes with the lid closed. Then, carefully oil the grates using long tongs and a paper towel dabbed in oil.

Grill the Chicken Thighs

  1. Remove chicken from the marinade, letting any excess drip off (then discard the used marinade). Grill chicken skin-side down for about 7 minutes or until the pieces lift easily from the grates without sticking or tearing.
  2. Turn off HALF of the burners and flip the chicken pieces over and onto the unlit side. Then turn the side with *no chicken* on to high heat. (You’re basically creating an oven to finish cooking the chicken without burning it).
  3. Cover the grill and continue cooking the chicken until it reaches 165ºF internal temperature.

Brush with the Honey Mustard Sauce

  1. Brush the chicken pieces on both sides with the reserved honey mustard sauce and continue cooking over indirect heat (unlit side) with the cover closed for 5-10 minutes more, until the glaze is caramelized and the internal temperature reaches 175ºF.

Rest the Chicken

  1. Let chicken rest on a plate, uncovered, for 5-10 minutes before serving for the juiciest results. The total cooking time will be 25-35 minutes in total.

Notes

  • The cooking time is an estimate as grills vary widely in heat distribution, proximity to heat source, and heat retention. Always rely on an instant-read thermometer for accuracy.
  • For dark meat like thighs and drumsticks, cook to at least 175ºF (79ºC) to break down tough collagen, ensuring that desirable fall-apart tender texture.
  • This recipe can be adapted for a charcoal BBQ. Create two cooking zones by piling all of the charcoal on one half of the grill for direct heat, leaving the other side as an indirect heat zone.

To Bake Your Honey Mustard Chicken (Oven Method)

  1. Preheat your oven to 400°F (205°C) and line a large baking sheet with parchment paper.
  2. Remove the marinated chicken thighs from the fridge and place them on the prepared baking sheet, ensuring they are not touching each other. Discard any leftover marinade that has come into contact with raw chicken to avoid cross-contamination.
  3. Bake the chicken thighs in the preheated oven for about 25-30 minutes or until they reach an internal temperature of 165°F (74°C).
  4. Brush the chicken pieces on both sides with the reserved honey mustard sauce and continue baking for another 5-10 minutes or until the glaze is caramelized and the internal temperature reaches 175°F (79°C).
  5. Remove the chicken from the oven and let it rest on a plate, uncovered, for 5-10 minutes before serving for maximum juiciness.
