  • ½ cup almonds (70 grams) blanched and sliced/slivered are best
  • cup sugar
  • ¼ cup softened butter
  • 1 tbsp flour
  • ½ tsp vanilla extract
  • tsp almond extract (optional, only if you have it)
  • Pinch of salt

For Tart:

  • 1 sheet puff pastry (½ of a 397g box, at room temperature)
  • 1 lb California strawberries thinly sliced
  • 1 tsp granulated sugar
  • 1 large egg (for egg wash)

Instructions

For Almond Cream:

  • In a small food processor or blender, first pulse the almonds until they form a fine meal. Then, add the remaining almond cream ingredients (sugar, softened butter, flour, vanilla, almond extract, and salt) and puree until the mixture is completely smooth and creamy.
