Easy Squash, Roasted Garlic + Goat Cheese Tart

Ingredients

  • 4 oz / 115 grams goat cheese
  • 1 medium winter squash (such as butternut, acorn, or delicata)
  • 1 head roasted garlic
  • 3-4 tbsp olive oil, divided use
  • 1 sheet puff pastry, thawed
  • 1 tsp kosher salt, plus more for sprinkling
  • Snipped chives for garnish
  • Aleppo pepper for garnish (optional)

Instructions

  1. Preheat oven to 400ºF (200ºC). Cut squash in half lengthwise and scoop out seeds. Place cut side down on a baking sheet. Bake for 30-60 minutes, or until tender when easily pierced with a knife. Cooking time will vary depending on the type and size of your squash.
  2. While the squash bakes, prepare the garlic. Use a serrated knife to carefully slice the top off the head of garlic, exposing the cloves inside. Drizzle 1 tablespoon of olive oil over the cut surface, then wrap the garlic head snugly in a large square of parchment paper or aluminum foil. Roast on the same pan as the squash for about 40 minutes, or until the cloves are golden brown and very tender.
  3. Once squash and garlic are roasted, allow them to cool slightly until they are comfortable to handle. While they cool, unroll one sheet of thawed puff pastry and gently roll it out into a square, approximately 11″ x 11″ (28cm x 28cm). Position the pastry on a parchment-lined baking sheet and lightly brush the surface with an additional tablespoon of olive oil.
  4. When the squash and garlic are cool enough, scoop out the flesh from the squash (you’ll need about 1 1/2 cups) and squeeze the soft, roasted cloves from the garlic head. Transfer the measured squash and all the roasted garlic to a medium bowl. Add 1 teaspoon of kosher salt and stir until the mixture is well combined and smooth. Taste and adjust seasoning with more salt if desired.
  5. Evenly spread the squash and garlic mixture over the prepared puff pastry, leaving a small border around the edges. Crumble the goat cheese evenly over the squash mixture, then drizzle lightly with a final touch of olive oil. Sprinkle with a tiny pinch of salt for extra flavor.
  6. Bake the tart in the preheated 400ºF (200ºC) oven for 15-20 minutes, or until the puff pastry crust is golden brown and beautifully puffed up.
  7. Once baked, remove from the oven. For a fresh finish, shower the tart with snipped chives and, if you like a little kick, a dusting of Aleppo pepper. Serve the tart warm, cut into small squares, and enjoy!
