The best apple cake – a fluffy, tender cinnamon-spiced cake base topped with lots of juicy, brown-sugared apples. It’s like an apple pie and a cake had a delicious, delicious baby – truly the quintessential fall indulgence.

Ingredients

  • ½ cup butter softened
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 egg room temperature
  • 1 tsp pure vanilla extract
  • 9 oz / 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tbsp cinnamon
  • ½ tsp ground ginger
  • ¼ tsp ground nutmeg
  • ½ tsp kosher salt
  • 1 cup buttermilk
  • 3 medium apples peeled, cored, and thinly sliced (such as Honeycrisp, Fuji, or Granny Smith)

Toppings

  • 3 tbsp butter softened
  • cup brown sugar
  • ½ tsp cinnamon
  • pinch of salt

Instructions

  • Prepare the Pan: Preheat your oven to 350ºF (175ºC). Lightly grease an 8×8-inch square baking pan with butter and dust it with flour, or line it with parchment paper, leaving an overhang on two sides for easy removal. This ensures your beautiful cake won’t stick!
  • Cream Wet Ingredients: In the bowl of a stand mixer fitted with the paddle attachment (or using a hand mixer), combine the softened butter, granulated sugar, and brown sugar. Beat on medium-high speed until the mixture is light, fluffy, and pale in color, about 2 minutes. Remember to scrape down the sides of the bowl occasionally to ensure everything is well combined. Beat in the egg and pure vanilla extract until just incorporated.
  • Combine Dry and Wet: In a separate medium bowl, whisk together the all-purpose flour, baking soda, cinnamon, ground ginger, ground nutmeg, and kosher salt. With the mixer speed on low, gradually incorporate about one-third of the dry flour mixture into the butter mixture, mixing until just combined. Follow with half of the buttermilk, mixing gently. Repeat this process, ending with the final third of the flour mixture. Be careful not to overmix the batter; mix only until no dry streaks remain.
  • Assemble and Bake: Spread the prepared cake batter evenly into your greased and floured (or parchment-lined) baking pan. Arrange the thinly sliced apples over the entire surface of the batter. In a small bowl, combine the topping ingredients (softened butter, brown sugar, cinnamon, and a pinch of salt) with a spoon until crumbly. Use your fingers to pinch off small pieces of this topping and artfully drop them over the apples. Bake for approximately 50 minutes, or until the apple topping is beautifully caramelized and the center of the cake feels slightly springy when gently pressed. A toothpick inserted into the center of the cake (avoiding an apple slice) should come out clean.
  • Cool and Serve: Allow the Apple Pie Cake to cool in the pan on a wire rack for at least 15-20 minutes before carefully lifting it out using the parchment paper overhangs. This cooling time allows the cake to set properly and the caramelized apples to firm up slightly. Serve warm or at room temperature. It’s utterly delicious on its own, but a scoop of vanilla bean ice cream or a dollop of fresh whipped cream elevates it to an even more decadent dessert. Enjoy this taste of autumn!
