Grilled Strawberry Shortcake Kebabs

Grilled strawberries and smoky grilled biscuits come together with a fresh, vibrant strawberry sauce and airy whipped cream in a show-stopping version of the beloved summer dessert. Best of all, it doesn’t require you to turn on the oven!

Ingredients

For Strawberry Sauce and Whipped Cream

  • ¾ lb strawberries
  • ½ cup + 2 tbsp granulated sugar (divided use)
  • 1 cup whipping cream
  • ½ tsp pure vanilla extract

For Biscuits

  • 2 cups (9 oz) all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp kosher salt
  • ½ cup (4 oz) cold unsalted butter
  • ¾ cup whole milk

For Grilled Strawberries

  • ¾ lb strawberries
  • ⅓ cup granulated sugar

Instructions

  1. Prepare Strawberry Sauce: Puree ¾ lb strawberries with ½ cup sugar and 1 tbsp water in a blender until very smooth. Refrigerate this strawberry puree until ready to use.
  2. Make Whipped Cream: Beat whipping cream with the remaining 2 tbsp sugar using an electric beater until soft peaks form. Beat in the vanilla extract.
  3. Assemble Biscuits: Whisk flour with baking powder and salt. Use a box grater to grate cold butter directly over the flour mixture. With a fork and a light touch, gently mix the butter into the dry ingredients. Add the milk and stir with a fork until the mixture forms a shaggy dough. Turn the dough onto a lightly floured surface and press it together into a disk shape. Very gently knead it 3-4 times by folding it over on itself until it comes together cohesively. Roll out to ¾-inch thickness, then use a 2-inch round cutter (or an overturned shot glass) to make circles. Gently roll out scraps again to make more circles. Thread biscuits onto skewers (2 each) and transfer them onto a parchment-lined baking sheet.
  4. Prepare Grilled Strawberries: Remove stems from most of the strawberries (you can leave a few for color and visual appeal) and cut any large ones in half. Spread the ⅓ cup sugar in a shallow baking dish. Rinse berries, and while they’re still wet, dump them into the sugar and toss with a spoon to coat evenly. Thread 3-4 berries per skewer.
  5. Grill Biscuits and Strawberries: Light one half of your grill and set it to medium heat, preheating for about 10 minutes. Place the biscuit skewers over direct heat and close the lid. Cook for about 2 minutes, until distinct grill marks form, then flip and repeat on the other side. Transfer the biscuits to the unlit side of the grill, close the lid, and “bake” until golden and puffed (approximately 8 minutes more). Remove biscuits to a serving plate, then increase the grill heat to high. Grill the skewered strawberries over direct high heat until they are slightly softened and charred in spots, about 2-3 minutes total. Be careful not to overcook them, or they may lose their shape and fall off the skewers. Transfer grilled strawberries to the serving plate.
  6. Serve: Arrange the grilled biscuits, grilled strawberry skewers, and generous dollops of vanilla whipped cream on plates. Drizzle generously with the fresh strawberry sauce. This dessert may be served right off the grill while still warm, or at room temperature. Enjoy this extraordinary summer treat!

If you are using bamboo skewers, it is essential to soak them in water for at least 2 hours prior to grilling. This prevents them from burning on the grill. A helpful tip: soak a large batch of skewers and then stash the extras in your freezer for future grilling adventures!
