Galiano Island, notably the Gulf Island closest to Vancouver, offers an accessible escape into nature’s embrace. Our recent stay there was nothing short of enchanting, painting vivid memories that would soon translate into this delightful recipe.

From the doorstep of our accommodation, we were treated to a breathtaking spectacle: playful seals frolicking against a backdrop of ethereal, misty islands emerging from the sparkling turquoise sea, mere hundreds of meters away. The air was crisp, carrying the scent of salt and pine, a testament to the island’s pristine environment. Even more appealing to a home baker like myself were the abundant pear and plum trees, heavy with ripe fruit, right outside our window. It was a scene straight out of a pastoral dream, a generous bounty of nature awaiting discovery.

The island’s wonders didn’t stop there. We heard whispers of a pod of orcas gracing the nearby waters, a truly magnificent sight, though sadly, our schedule didn’t allow us the chance to venture out onto the water to witness them. Nevertheless, the sheer possibility of such encounters only added to the mystique of this truly magical place, a reminder of the rich biodiversity thriving in these coastal waters.

My son, Theo, was particularly captivated by the island’s edible treasures. He spent his days happily snacking on sun-warmed, perfectly ripe plums, plucked straight from the branches. His pure, unadulterated joy and the adorable mess he made while relishing each juicy bite were truly infectious. It was a simple, yet profound moment that deeply resonated with me. Witnessing his enthusiasm for fresh, seasonal fruit planted the seed for what was to become this cake. When we returned home, still buzzing from the island’s charm and Theo’s plum-fueled delight, my first stop was the local farmers market. I bought a generous haul of plums, ready to transform that vibrant memory into a tangible, delicious creation. And thus, a cake was born!

However, I understand that cardamom, while beloved by many, might not be everyone’s favorite spice. If its unique profile isn’t to your taste, or if you simply don’t have any on hand, feel free to omit it. Cardamom-Plum Cake

Ingredients

  • 2 cups all-purpose flour
  • ¾ cup granulated sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 10 cardamom pods, seeds removed and finely crushed with a knife or mortar and pestle
  • ½ tsp kosher salt
  • ½ cup unsalted butter, melted
  • 1 ¼ cups sour cream
  • ¼ cup milk
  • 1 large egg
  • 1 tsp pure vanilla extract
  • 12 oz ripe plums, halved, pitted, and cut into ½-inch slices (yields approximately 2 cups sliced)

Instructions

  1. Preheat oven to 350ºF (175ºC). Grease and flour a 9×2-inch round cake pan. Line the bottom of the pan with parchment paper, then set aside.
  2. In a large mixing bowl, whisk together the flour, granulated sugar, baking soda, baking powder, freshly crushed cardamom, and kosher salt until well combined.
  3. In a separate medium bowl, whisk together the melted butter, sour cream, milk, egg, and vanilla extract until smooth. Scrape this wet mixture into the dry ingredients. Stir gently until just barely combined, being careful not to over-mix. It’s okay if a few floury patches remain at this stage.
  4. Gently fold in about three-quarters of the prepared plum slices into the batter. As you fold, any remaining floury patches should become incorporated. The key is to avoid over-mixing the batter to ensure a tender crumb.
  5. Transfer the batter evenly into the prepared cake pan. Arrange the remaining plum slices artfully on top of the batter.
  6. Bake for 35 to 45 minutes, or until the top of the cake feels springy when lightly pressed and a toothpick inserted into the center comes out clean or with just a few moist crumbs attached.
  7. Allow the cake to cool in the pan on a wire rack for 10 minutes. Then, carefully run a knife around the edges of the pan to loosen the cake. Invert the cake onto a plate or a clean oven mitt. Carefully flip it right-side up directly onto the cooling rack to allow it to cool completely before transferring to a cake stand or serving plate.
