It’s genuinely important to step back, unplug, recharge, and reconnect with what truly matters in life. During this period, we enjoyed a wonderfully memorable family Christmas, made even more special by the visit of my dear sister and her husband. Adding to the excitement and joy, my sister is expecting her first baby – a truly joyous prospect that has brought so much anticipation to our family!

This past Christmas was particularly magical for us, especially seeing it through the eyes of my eldest, Theo. At four years old, this was the first year he truly grasped the concept of Christmas and was absolutely thrilled for Santa’s arrival. Watching his eyes light up with pure wonder and anticipation, listening to his innocent excitement about presents and festive stories, was an experience I will cherish forever. It was a beautiful reminder of the simple joys and genuine magic that the holiday season brings, especially when experienced through the pure lens of childhood. We spent our days creating cherished memories, filled with abundant laughter, delicious festive treats, and the unparalleled warmth of family togetherness.

Santa, being the incredibly generous soul he is, certainly didn’t hold back this year! He brought Theo and his sibling a brand new trampoline, promising endless hours of energy-burning fun, and a copious amount of glitter glue. While the trampoline is a fantastic addition for active play, the glitter glue did make me pause and humorously question whether I myself had truly made it onto Santa’s “nice” list this year! The aftermath of any crafting session involving glitter glue is a special kind of domestic chaos that only parents truly understand and bravely navigate. Nevertheless, it’s a small and often sparkly price to pay for the sheer delight and creative joy it brings to little ones.

The Spirited Adventures of a Two-Year-Old: A Parent’s Humorous & Exhausting Diary

My adorable little munchkin, Everett, has officially and enthusiastically embraced the infamous “terrible twos” – though I prefer to affectionately call it the “spirited twos” or perhaps even the “inquisitive twos.” This delightfully challenging new phase is undeniably another significant reason for my extended blog hiatus. Instead of eloquently documenting his daily, often hilarious, but sometimes utterly baffling shenanigans after 7 pm, I’ve found myself routinely opting for a much-needed, often strategically timed, bubble bath. This is usually followed by some mind-numbingly comforting Friends reruns, a crucial ritual that helps me decompress until a “reasonable” bedtime (which, let’s be honest, is typically around 8 pm for me!). It’s a vital survival mechanism, a silent plea for an hour or two of uninterrupted peace before the next day’s unpredictable adventures inevitably begin.

Everett is, without a doubt, a sweet, loving, and undeniably clever little boy. Yet, maintaining his safety and simultaneously preventing him from embarking on various naughty or, let’s be frank, outright disgusting endeavors, consumes an astonishing amount of my daily energy and mental fortitude. Our conversations often unfold with desperate pleas and firm directives, frequently including phrases like: “Everett, if you keep licking the playground equipment, we are absolutely, definitely going home immediately,” or “If that spoon goes anywhere near your bum one more time, it’s gone for the rest of the day!” And, a constant, weary refrain that echoes throughout our home all day long, “NO, my love, we absolutely DO NOT drink the toilet water, we don’t drink from the dog’s water bowl, and we certainly don’t drink any puddle water outside!” The sheer creativity and boundless curiosity of a two-year-old in discovering new things to explore with their mouth is both astounding to witness and, frankly, quite horrifying to manage.

The growing list of his memorable exploits is extensive, far beyond anything any non-parent could possibly even dream of. There was the unforgettable afternoon he decided my favorite lip balm was a prime candidate for a thorough “bum test.” Another heart-stopping incident involved him stripping off his diaper with impressive speed and attempting to stick his tiny private parts into an electrical socket – a moment that led to immediate, and rather frantic, child-proofing reinforcements throughout the house! He’s also been known to meticulously scoop toilet water into his toy kitchen sink for an impromptu and unsanitary cooking session. And these, my friends, are just a few of the more dramatic highlights.

Lest I forget, there was also the time he swallowed a pen clicker – yes, you read that correctly, a tiny pen clicker! I’m pretty sure the nurse hotline now recognizes my voice the instant I call, and I wouldn’t be surprised if I’m just one phone call away from having social services show up at my door, purely based on the sheer volume and varied nature of my emergency calls. It’s a constant, exhausting, yet deeply loving dance, with Everett always two gleeful, mischievous steps ahead of my exasperated, desperate, and often sleep-deprived attempts to keep him safe, clean, and out of harm’s way.

Just this week, he gifted me a truly memorable and rather chaotic start to the day. He woke up silently, an ominous sign in itself, at 5:30 am. By 6 o’clock, when I finally managed to emerge from my bed, the house already bore the unmistakable signs of his industrious morning. He had meticulously “washed” his hair, not with water as one might expect, but with a generous application of bathroom hand soap – a thick, fragrant lather that, of course, was never rinsed. To add a special, albeit unusual, touch, he then garnished his soapy locks with a fistful of kosher salt, meticulously scooped from my stove-side bowl. His creative endeavors didn’t cease there; my husband Adarsh’s cherished tropical indoor tree was found meticulously de-potted, its soil artistically scattered across the kitchen floor. And for his grand finale, he transformed my canister of granulated sugar into a makeshift sandbox, perfectly suited for his beloved toy animals. And that, dear friends, is just what we managed to discover!

This, in all its messy, unpredictable glory, is my life right now: a beautiful, chaotic, utterly exhausting, and profoundly rewarding whirlwind. To all the seasoned moms and dads out there, I implore you: please send me your reassuring promises of peaceful, quiet times to come. Reassure me that there’s a shimmering light at the end of this wonderfully messy tunnel of toddlerhood. And also, please send lots and lots of carbs. Because sometimes, only a generous slice of moist, chocolate-studded zucchini bread (or three) can properly fuel a parent through the delightful, yet demanding, rigors of the day.

Ingredients for the Perfect Double-Batch Chocolate Zucchini Bread

  • 2 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp kosher salt
  • 2 cups shredded zucchini
  • ¾ cup vegetable oil
  • ¾ cup sour cream or full-fat Greek yogurt
  • ½ cup whole milk
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 1 cup coarsely chopped dark chocolate (or high-quality chocolate chips)

Step-by-Step Instructions for Your Delicious Zucchini Bread

  • 1. Prepare Your Oven & Pans: Begin by preheating your oven to 350ºF (175ºC). Generously grease and flour two standard loaf pans, or for easier removal, line them with parchment paper, allowing some overhang on the longer sides. This overhang will serve as a convenient sling to lift the baked bread out later.
  • 2. Combine Dry Ingredients: In a large mixing bowl, thoroughly whisk together all the dry ingredients: the all-purpose flour, granulated sugar, unsweetened cocoa powder, baking powder, baking soda, and kosher salt. Ensure these ingredients are well combined and there are no lumps, which helps in even distribution throughout the batter.
  • 3. Mix Wet Ingredients: In a separate, medium-sized bowl, whisk together the shredded zucchini, vegetable oil, sour cream (or full-fat Greek yogurt if preferred for a slightly tangier note), whole milk, large eggs, and pure vanilla extract. Continue whisking until all these wet ingredients are fully combined and appear smooth.
  • 4. Gently Combine Wet and Dry: Pour the wet ingredient mixture into the large bowl containing the dry ingredients. Using a rubber spatula, gently fold the ingredients together until they are about 80% combined. It’s crucial not to overmix at this stage; overmixing can develop the gluten too much, resulting in a tough, dense bread rather than a tender one. At this point, gently fold in the coarsely chopped dark chocolate (or chocolate chips). Continue to fold until the batter is mostly uniform, but still avoid vigorous mixing. A few small streaks of flour are perfectly acceptable.
  • 5. Bake to Perfection: Divide the prepared batter evenly between the two lined or greased loaf pans. Place them carefully in the center rack of your preheated oven. Bake for approximately 40-50 minutes. The bread is done when a wooden skewer or toothpick inserted into the very center comes out with only moist crumbs attached (not wet batter), or when the top of the bread springs back lightly when gently pressed with a fingertip.
  • 6. Cool and Enjoy: Once baked, remove the loaf pans from the oven and allow the bread to cool in the pans for about 10-15 minutes. This cooling period helps the bread to set and makes it easier to handle. After this initial cooling, carefully lift the loaves out of the pans using the parchment paper overhang and transfer them to a wire rack to cool completely. This chocolate zucchini bread is absolutely delicious served warm with a cup of coffee or tea, or equally delightful at room temperature. Store any leftovers tightly wrapped at room temperature for up to 3 days, or freeze slices for longer enjoyment.
