- ¼ lb uncooked pasta (about 100 g), such as penne or rotini
- 1 cup frozen corn
- 1 stalk celery, thinly sliced
- ½ cup grated, peeled carrot
- 2 cups coarsely chopped bell peppers (any color)
- 2 cups halved baby tomatoes (or coarsely chopped larger tomatoes)
- ½ cup chopped fresh basil (really pack it in for maximum flavor)
- ¼ cup capers (drained, or a handful of chopped black olives)
- 1 tsp kosher salt, plus more for pasta water
- 5 oz feta cheese, crumbled (about 1¼ cups)
