A while ago, I mentioned we were exploring various neighborhoods, trying to find the perfect fit. Well, after much deliberation and many batches of comforting treats, we’ve finally picked one!

The thought of them playing in playgrounds where news reports talked about used needles being found was a powerful catalyst for change. When you have no extended family nearby for support, and every viable choice seems to lead to a dreaded commute in an obscenely expensive housing market, it can genuinely drive a person to their wits’ end. (At least, this person! I have friends who’ve made similar big decisions with far less dramatic internal monologues.)

So, where exactly are we moving? If you’ve followed my social media stories, you might have caught glimpses of the stunning landscapes along the iconic Sea-to-Sky Highway that I often share during our drives. Our chosen community lies along this very route, nestled on the shores of the magnificent Howe Sound fjord. But despite these practical shifts and the known challenges, an almost unnerving sense of calm and resolution has settled over me. To be honest, it feels as though we’ve been guided by a deeper intuition, a divine guidance, towards this specific place. The sheer, breathtaking beauty of the natural environment here simply pulls me in like a magnet. Every fiber of my being tells me this move feels right, deep in my gut. Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp fine sea salt
  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 2 large eggs
  • 1 tbsp pure vanilla extract

Instructions

  1. In a large bowl, whisk together the all-purpose flour, unsweetened cocoa powder, baking powder, baking soda, and fine sea salt. Set aside.
  2. In the bowl of a stand mixer fitted with the paddle attachment (or using a hand mixer), cream together the softened unsalted butter and granulated sugar on medium-high speed. Beat until the mixture is very light and fluffy, which usually takes about 3 minutes.
  3. Scrape down the sides of the bowl. Add the eggs, one at a time, beating well after each addition until fully incorporated. Stir in the pure vanilla extract.
  4. Reduce the mixer speed to low. Gradually add the dry flour mixture to the wet ingredients, beating just until combined and no streaks of flour remain. Be careful not to overmix the dough.
  5. Divide the dough in half and roll each portion between two sheets of parchment paper to about 1/4-inch thickness. This makes it easier to handle and ensures even cookies.
  6. Transfer the parchment-wrapped dough sheets to a flat surface or baking sheet and chill in the refrigerator for at least one hour. This chilling step is crucial for firm dough that’s easy to cut and helps prevent spreading during baking.
  7. Preheat your oven to 375ºF (190ºC). Prepare baking sheets by lining them with parchment paper.
  8. Once the dough is thoroughly chilled, remove one sheet from the refrigerator. Using your desired cookie cutters, cut out shapes. For best results and clean cuts, dip your cookie cutters in cocoa powder or flour between cuts.
  9. Carefully transfer the cut cookie shapes to the prepared baking sheets, leaving about 2 inches of space between each cookie. If the dough becomes too soft during cutting, briefly return it to the freezer for 5-10 minutes to firm up (see tip above).
  10. Bake the cookies for approximately 6 minutes, or until they are slightly puffed and you see small crackles beginning to form at the edges. The cookies should still feel soft to the touch and appear slightly underbaked in the center; this ensures a chewy, tender texture.
  11. Remove the baking sheets from the oven and let the cookies cool on the sheets for a few minutes before transferring them to wire racks to cool completely. It’s essential that the cookies are entirely cool before you begin decorating them with icing.
