Vegan Coconut and Chocolate Granola Bar Recipe

A delightfully chewy, perfectly crunchy, and richly chocolaty homemade vegan granola bar recipe, ideal for a wholesome lunchbox treat or a quick breakfast on the go. These bars perfectly capture that nostalgic crunchy texture you crave, reminiscent of a delicious oatmeal cookie, making them an instant family favorite!

Ingredients

  • ½ cup shredded coconut
  • ½ cup chopped dark chocolate (ensure it’s vegan if needed)
  • ½ cup chopped nuts (almonds, walnuts, or pecans work well)
  • ½ cup dried fruit (cranberries, raisins, or chopped apricots)
  • 1 ½ cups old-fashioned large-flake oats (not quick or instant; divided use)
  • ¼ cup brown sugar, packed
  • ½ cup maple syrup (pure maple syrup is recommended)
  • ½ cup melted coconut oil (can substitute with butter if not strictly vegan)

Instructions

  1. Preheat your oven to 350ºF (175ºC). Line a 9×9 inch (23×23 cm) square baking pan with parchment paper, leaving an overhang on two sides to easily lift the bars later.
  2. In a large mixing bowl, combine the shredded coconut, chopped dark chocolate, chopped nuts, and dried fruit. Mix gently to distribute evenly. Scoop out about a handful of this mixture into a separate small bowl and set aside; this will be used as a topping later.
  3. Take ½ cup of the old-fashioned large-flake oats and process them in a blender or food processor until they form a fine flour. This step is crucial for binding the bars!
  4. Add the oat flour to the large bowl with the coconut mixture. Then, add the remaining 1 cup of whole large-flake oats, brown sugar, maple syrup, and melted coconut oil to the bowl. Toss all the ingredients together thoroughly until everything is evenly coated and well combined.
  5. Transfer the mixture into the prepared baking pan. Using your hands (you might want to dampen them slightly if the mixture is too sticky), press the mixture down very firmly and evenly into all corners of the pan. The firmer you press, the better your bars will hold together.
  6. Bake for 20 minutes. After 20 minutes, carefully remove the pan from the oven and evenly sprinkle the reserved handful of topping mixture over the surface of the bars.
  7. Return the pan to the oven and bake for an additional 5 minutes, or until the toppings are nicely toasted and the edges of the bars are golden brown.
  8. Once baked, remove the pan from the oven. Let the bars cool in the pan for at least 5 minutes. Then, using the parchment paper overhang, carefully lift the entire slab of granola from the pan and transfer it to a wire rack to cool completely. It is important for the bars to cool completely before slicing to ensure they set properly and maintain their crunchy texture.
  9. Once fully cooled, slice the granola slab into 16 individual bars. Enjoy your perfectly crunchy, homemade vegan chocolate and coconut granola bars!
