The Foundation: Perfect Chocolate Buttermilk Cupcakes

The magic begins with our scrumptious cocoa-buttermilk cupcakes. If you’ve been following along, you know these are the base that continually earn rave reviews. They are incredibly easy to make, eliminating the traditional steps of creaming butter and sugar. Instead, you simply combine the dry ingredients with the wet ones, yielding a practically fail-proof recipe that results in an impossibly moist and rich chocolate cake every single time.

One unique aspect of this chocolate cupcake batter is its runny consistency. For effortless portioning, we recommend transferring the mixed batter from your mixing bowl into a large measuring cup equipped with a spout. This simple trick makes filling your muffin liners a breeze, preventing spills and ensuring an even distribution. Remember, it’s crucial not to overfill your cupcake liners; aim for no more than two-thirds full. Overfilling can lead to overflow in the oven, creating a messy situation and potentially altering the texture of your cupcakes. Patience is key for perfectly domed tops!

Crafting the Golden Heart: Homemade Caramel Filling

While your chocolate cupcakes are cooling, it’s time to prepare the star of the filling: our homemade caramel. This process might seem intimidating to some, but it’s surprisingly straightforward and deeply rewarding. Simply stir a cup of granulated sugar in a heavy-bottomed saucepan over medium heat. Witness the captivating transformation as the sugar crystals melt into a liquid, which then bubbles and gradually darkens. This alchemy results in a deeply flavorful, amber-hued syrup – a true culinary delight.

Once your sugar has reached that perfect amber hue, swiftly whisk in some heavy cream and softened butter. Be cautious, as the hot caramel will bubble up aggressively – always whisk from arm’s length! The result is a thick, luxuriously sticky caramel that will elevate your cupcakes to new heights. The best part? This recipe yields enough caramel that you’ll likely have some leftover, perfect for warming up later to drizzle over ice cream sundaes, enhance coffee, or simply enjoy by the spoonful.

Of course, if the thought of working with molten sugar makes you a little nervous, there’s a convenient shortcut: high-quality store-bought dulce de leche or caramel sauce can be a perfectly acceptable substitute. While homemade caramel offers an unparalleled depth of flavor, a good quality store-bought option will still deliver a delicious experience, ensuring you don’t miss out on the Caramallow magic.

Pillowy Perfection: Fluffy 7-Minute Marshmallow Frosting

The literal “icing on the cake” for these Caramallow Cupcakes is our divine 7-minute marshmallow frosting. This iconic frosting is a soft meringue whipped to airy submission in a double boiler. The result is a frosting that truly lives up to its name – it’s like eating a cloud. Its light, sweet, and incredibly fluffy texture provides the perfect counterpoint to the rich chocolate cake and dense caramel filling, creating a harmonious balance of flavors and sensations that will leave you craving more.

Assembling Your Masterpiece: The Caramallow Cupcake Technique

Filling cupcakes with a gooey center can sometimes be tricky, but we’ve perfected a method that’s both efficient and aesthetically pleasing. Instead of scooping out a well with a paring knife, which can be messy and sometimes compromise the cake’s structure, we opt for a simple piping technique. First, transfer your marshmallow frosting into a pastry bag fitted with a large star tip (an extra-large closed star tip works wonderfully). Pipe a generous ring of frosting around the perimeter of each cooled chocolate cupcake.

Once the frosting perimeter is in place, you’ve created a perfect reservoir for the caramel. Using two small spoons (one to scoop the caramel, the other to gently scrape it off), flood the center of each cupcake with a scant teaspoon of your cooled, sticky caramel filling. Finally, complete the frosting by piping a second layer on top, starting by tracing your first circle and then moving inwards and upwards to create a beautiful, towering swirl effect. This method not only looks professional but also ensures a delightful burst of caramel in every bite without compromising the cupcake’s integrity.

This systematic approach makes the assembly process much cleaner and yields consistently beautiful results. It truly makes these Caramallow Cupcakes a showstopper, perfect for parties, celebrations, or simply to treat yourself and your loved ones to an unforgettable dessert.

Why You’ll Love These Caramallow Cupcakes

Beyond their stunning appearance and incredible flavor profile, these Caramallow Cupcakes offer a truly satisfying baking experience. The combination of rich chocolate, sweet and salty caramel, and airy marshmallow is a triple threat that guarantees smiles. They are substantial enough to feel like a luxurious dessert but still light enough thanks to the meringue frosting. Whether you’re an experienced baker or just starting out, the components of this recipe are approachable, yet the final product feels incredibly gourmet. They’re perfect for any occasion, from casual get-togethers to elegant celebrations.

Tips for Caramallow Cupcake Success

  • Ingredient Temperature: Ensure your egg whites for the frosting are at room temperature for the best volume. Buttermilk for the cupcakes should also be at room temperature.
  • Don’t Overmix: When preparing the chocolate cupcake batter, mix just until combined. Overmixing can lead to dry, tough cupcakes.
  • Caramel Caution: When making caramel, pay close attention. Sugar can go from perfect to burnt very quickly. Have your cream and butter measured and ready to add immediately after the sugar turns amber.
  • Double Boiler for Frosting: Using a double boiler for the marshmallow frosting is crucial. It gently heats the egg whites and sugar, allowing them to dissolve completely and create a stable meringue without scrambling the eggs.
  • Cool Completely: Ensure both the chocolate cupcakes and the caramel filling are completely cool before assembling. Warm components will melt the frosting and create a gooey mess.
  • Piping Practice: If you’re new to piping, practice on a piece of parchment paper first. You can always scrape the frosting back into the bag.

Storage and Serving Suggestions

These Caramallow Cupcakes are best enjoyed the day they are made due to the delicate nature of the marshmallow frosting. However, if you have leftovers, store them in an airtight container at room temperature for up to two days. Refrigeration can sometimes alter the texture of the frosting, making it slightly firmer, but they will still be delicious. For optimal freshness, consider frosting the cupcakes closer to serving time if preparing them in advance. Serve them with a tall glass of milk or a warm cup of coffee for a truly indulgent treat.

Chocolate Cupcakes with Caramel Filling and Marshmallow Frosting

By: Jennifer Pallian BSc, RD

This caramel-filled, marshmallow-topped cupcake recipe pretty much takes, well, the cake. The chocolate cupcakes are moist and delicious.

Prep Time: 1 hour 30 minutes

Cook Time: 25 minutes

Total Time: 1 hour 55 minutes

Servings: 24 cupcakes

Ingredients

For Chocolate Cupcakes

  • 1 ¾ cups all-purpose flour
  • 2 cups granulated white sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ tsp baking soda
  • ¾ teaspoon salt
  • 2 large eggs
  • 1 cup buttermilk (or substitute: 1 tbsp white vinegar in a cup, fill with milk, let stand 5 mins)
  • ½ cup butter, melted
  • 1 tbsp vanilla extract
  • 1 cup hot coffee (or 2 tsp instant coffee in 1 cup boiling water)

For Caramel Filling

  • 1 cup sugar
  • ½ cup heavy whipping cream
  • ⅓ cup (6 tbsp) softened butter
  • ⅛ tsp salt
  • ½ tsp vanilla extract

For Marshmallow Frosting

  • 5 large egg whites, room temperature (not pasteurized)
  • 1 ¾ cups sugar
  • ⅓ cup water
  • ½ tsp cream of tartar
  • Pinch of salt
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 375 degrees F (190°C). Line two 12-cup muffin tins with paper liners; set aside.
  2. In a large bowl of a standing mixer, stir together flour, sugar, cocoa, baking soda, and salt. Add eggs, buttermilk, melted butter, and vanilla extract. Beat until smooth, about 3 minutes. Remove bowl from mixer and stir in hot coffee with a rubber spatula. The batter will be very runny.
  3. Pour batter into a large liquid measuring cup with a spout. Divide batter among prepared muffin cups, filling each no more than two-thirds full to prevent overflow. Bake for 20-24 minutes, or until cupcakes feel slightly springy when gently pressed in their centers. Transfer cupcakes to wire racks to cool completely.
  4. For the Caramel Filling: Place sugar in a medium saucepan over medium heat. Whisk often as the sugar starts to stick to the bottom, clump up, and then eventually melt. Continue only until the syrup comes to a boil, then stop whisking. You can swirl the pan occasionally, but avoid whisking further.
  5. Watch very closely as the syrup quickly changes from clear to golden brown. As soon as it turns a deep amber color, remove the saucepan from the heat. Working quickly and averting your face, whisk in the cream, holding the whisk at arm’s length as the caramel will bubble up aggressively. Whisk in the softened butter, salt, and vanilla extract. Set aside to cool completely. This entire caramel-making process typically takes about 5 minutes.
  6. For the Marshmallow Frosting: Combine egg whites, sugar, water, cream of tartar, and a pinch of salt in the top of a double boiler or a heatproof bowl set over a saucepan of simmering water. Using an electric mixer, beat on high for about 7 minutes, or until the frosting is shiny, voluminous, and holds firm peaks.
  7. Remove the bowl from the heat and beat in the vanilla extract. Allow the frosting to cool for at least 5 minutes before using.
  8. To Assemble the Cupcakes: Transfer the marshmallow frosting to a pastry bag fitted with a large tip (an open star tip works well). Pipe a ring of frosting around the outer circumference of each cooled cupcake.
  9. Using two small spoons (one to scoop, one to scrape), transfer a scant teaspoon of the cooled caramel filling into the centers of the frosted rings.
  10. Finish piping the frosting onto the cupcakes, first by retracing your initial circle, then moving inwards and upwards to create a beautiful, swirled peak.

Conclusion

These Caramallow Cupcakes truly are a labor of love, but every step is worth it for the incredible outcome. The harmonious blend of rich chocolate, gooey caramel, and ethereal marshmallow creates a dessert that is both comforting and exciting. Whether you’re baking for a special occasion or simply to satisfy a sweet craving, these cupcakes are guaranteed to impress.
