This Strawberry Caprese Salad features fresh mozzarella, juicy strawberries, fresh basil, and a deliciously sweet balsamic reduction.

Ingredients

  • ¼ cup granulated sugar

For Salad:

  • 1 ½ pints strawberries (hulled and halved lengthwise)
  • 200 grams bocconcini (sliced, or whole cocktail bocconcini)
  • 2 tbsp extra virgin olive oil
  • balsamic reduction (as prepared above)
  • fresh basil leaves (torn)
  • coarse or flakey salt (to taste)

Instructions

For Balsamic Reduction:

  1. Combine 1 cup balsamic vinegar and ¼ cup granulated sugar in a small saucepan. Bring to a gentle simmer over medium heat, stirring occasionally. Continue to simmer until the mixture reduces to a thick, syrupy consistency, similar to maple syrup or honey. This process typically takes about 10-15 minutes.
