Typically, I ‘live’ for the cozy embrace of winter. My ideal winter scenario involves indulgent bubble baths, the warm glow of scented candles, hearty comfort food bubbling on the stove, enormous snuggly sweaters, soft wool socks, quiet reading nooks, and the gentle twinkle of fairy lights. These elements are truly my jam, crafting a perfect atmosphere of warmth and relaxation.

However, the winter that just passed felt different. It was undeniably darker, seemed to stretch on endlessly, and brought with it an unusual abundance of various viruses. I suspect this might be a universal experience for parents navigating the toddler years; with a 1-year-old and a 3-year-old at home, it feels like a constant cycle. As soon as one illness would sweep through our family, another seemed to be waiting in the wings. February, in particular, was a relentless rotation of stomach bugs and persistent head colds, leaving us all feeling quite miserable.

Motherhood has presented me with countless surprises, but one of the most remarkable and deeply appreciated transformations is the profound sense of toughness and adaptability it has instilled in me. It recently dawned on me that I haven’t taken any cold or stomach medications since 2012. This remarkable streak coincides perfectly with my journey through pregnancy, breastfeeding, and often, both simultaneously. Before this period, I was quick to reach for Advil Cold & Sinus at the first sign of a sniffle or Pepto Bismol at the slightest hint of nausea.

Now, with my children constantly bringing home new germs from preschool, play gyms, and public libraries, I’ve simply adapted to powering through. It’s become second nature; I don’t even pause to consider reaching for medication. I just carry on, finding a surprising inner strength I didn’t know I possessed. This isn’t just about motherhood, though it’s certainly a major catalyst. It’s also a testament to the power of a maximally occupied mind and a jam-packed schedule. There’s an amazing simplifying effect when your brain is fully engaged.

With less mental energy to dwell on minor illnesses or other small anxieties, I find myself surprisingly liberated. I cherish having less mental space for self-pity or worrying about trivial matters. This observation has resonated deeply, and I’ve since encountered similar sentiments echoed in various books. Elizabeth Gilbert, for instance, eloquently compares having a creative mind to owning a border collie: if you don’t give it a significant task to do, something to keep it actively engaged, it will inevitably find its own occupation, which will likely be destructive. This rings profoundly true, doesn’t it? In a paradoxical way, by taking on more responsibilities and keeping your mind engaged, you can actually simplify your life by reducing mental clutter and unnecessary dwelling.

It’s what I affectionately call “Chinese-ish” – a nod to familiar flavors with a unique twist. My apologies for the single, somewhat less-than-perfect iPhone photo; sometimes, it’s just about getting a good meal on the table, and aesthetics take a backseat. #it’sjustdinner, after all!

Now, as you glance at the ingredients list, you might notice one item that stands out like a bold, pulsating exclamation point: ketchup. I know, I know. It sounds unconventional, perhaps even jarring, in a dish meant to evoke Chinese flavors. However, I implore you: you simply have to trust me on this one. My conviction stems from a surprising culinary discovery years ago. I once stumbled upon a recipe for Chinese BBQ pork in an actual – albeit perhaps slightly dubious – Chinese cookbook that boldly called for ketchup. Intrigued and always open to new experiences, I gave it a try, and to my astonishment, it was utterly delicious.

This revelation came before I fully understood that traditionally, or rather, “authentic” Chinese BBQ pork typically relies on hoisin sauce for its distinctive sweet and savory profile. But here’s the thing: if it’s delicious, who truly cares about strict authenticity in every home-cooked meal? The goal is flavor and enjoyment, and this recipe delivers both in spades. It’s about creating delightful meals that everyone at the table loves, and sometimes that means breaking free from conventional expectations.

This brilliant creation is also known as Adarsh’s Chicken 65 Curry. Is it an improbable combination? Absolutely. Is it incredibly delicious? A resounding yes! These experiences have taught me that sometimes, the most unexpected ingredients can unlock truly remarkable flavors. Ketchup, with its unique blend of sweet, tangy, and umami notes, is a surprisingly versatile base that can add depth and richness to many savory dishes, especially when paired with ingredients like honey and garlic.

This particular recipe yields a fairly generous batch. I purposefully designed it with leftovers in mind, and indeed, we had plenty to enjoy the next day. This makes it an excellent choice for meal prep or for feeding a hungry family with ease. If you prefer a smaller portion, please feel free to halve the recipe; just remember to adjust the ketchup and honey to 3 tablespoons each.

  • 1 medium onion, halved lengthwise then thinly sliced crosswise
  • For the Honey-Garlic Sauce:
  • ⅓ cup ketchup
  • ⅓ cup honey
  • 6 cloves garlic, minced (approximately 2 tablespoons)
  • 2 tbsp soy sauce (low sodium preferred)
  • 1 tbsp Chinese rice wine, sherry, or dry white wine (optional, but adds depth)
  • 1 tsp five-spice powder (optional, for authentic Chinese BBQ pork flavor)
  • ½ tsp freshly ground black pepper

Instructions:

  1. Prepare the Pork: Season the pork strips generously all over with kosher salt. Heat 2 tablespoons of vegetable oil in a large wok or skillet over high heat until shimmering hot.
  2. Brown the Pork: Add half of the seasoned pork strips to the hot pan in a single layer. Brown well on all sides until nicely caramelized. This step is crucial for developing flavor and texture, so avoid overcrowding the pan – if you try to cook it all at once, it won’t brown properly. Transfer the browned pork to a clean bowl. Repeat with another splash of oil and the remaining half of the pork, browning it thoroughly, then add it to the bowl with the first batch. Any accumulated juices in the bowl are precious, so keep them!
  3. Sauté the Onion: In the same skillet (add a little more oil if the pan seems dry), add the thinly sliced onion. Reduce the heat to medium and cook, stirring occasionally, until the onion softens and turns a beautiful golden color, which should take about 6 minutes.
  4. Prepare the Sauce: While the onions are cooking, whisk together all the remaining sauce ingredients in a small bowl: ketchup, honey, minced garlic, soy sauce, Chinese rice wine (if using), five-spice powder (if using), and black pepper. Mix until well combined.
  5. Combine and Finish: Pour the prepared honey-garlic sauce into the skillet with the softened onions. Immediately return all the browned pork and any accumulated juices from the bowl back into the pan. Give everything a good stir, ensuring the pork and onions are thoroughly coated in the luscious sauce. If the sauce seems too thick, add a splash of water (1-2 tablespoons) to reach your desired consistency. Continue to cook for several minutes longer, stirring constantly, until the pork is fully cooked through and no longer pink inside, and the sauce has thickened slightly and coats the pork beautifully.
